Tre anni fa, quando ho iniziato a muovere i primi passi nel mondo dei lievitati, non lo avrei mai immaginato” commenta il maestro lievitista, Sergio Scovazzo, 30 anni, che prima di appassionarsi dell’arte bianca, nel 2020, lavorava come cuoco. “Voglio dirlo a tutti, soprattutto ai ragazzi e alle ragazze della mia età: non ci sono obiettivi irraggiungibili. Se metti nei tuoi sogni mente e tempo, i risultati arrivano. Si può iniziare tardi, sbagliare strada e farcela comunque”. “Tre anni fa eravamo un piccolo panificio in un paesino di provincia, ma non lo abbiamo mai vissuto come un limite. Questo riconoscimento è simbolo di dedizione e sacrificio. Abbiamo deciso di investire nella qualità e nella comunità, sono molto fiero di noi”, conclude Piero Mosso. Grano nasce nel 2018 dall’idea dei fratelli Mosso, il cui principale desiderio e obiettivo era quello di proporre un concetto di panificazione antico in chiave moderna. Quello che differenzia l’approccio dei due fratelli rispetto al mercato del panificio tradizionale e che costituisce la colonna portante del laboratorio di panificazione è la scelta di utilizzare farine piemontesi macinate a pietra e lievito madre per costruire un prodotto nuovo, la cui artigianalità e unicità prevalgono sulla produzione massiva che ne penalizzerebbe la qualità. Nel 2020, l’ingresso di Sergio Scovazzo nel laboratorio ha aperto la strada ai grandi lievitati.
